Pizza di grano d'India is a product typical of the province of Foggia but widespread in many other areas of Puglia.
It is a type of pizza prepared with corn flour that gives it the characteristic yellow colour.
This pizza is prepared by mixing corn flour with water, raisins, anchovies and salt. The mixture is kneaded until it is fairly firm.
The dough is then rolled out to a 2 cm thickness and placed in a baking pan. Extra virgin olive oil should be sprayed on top before baking.
This pizza can be seasoned with any kind of toppings.
