Scannatedda is a type of focaccia typical of the province of Foggia, in particular of the area of Ischitella.
It is 20-25 cm in length and made with durum wheat flour, wild fennel flowers and extra virgin olive oil.
The preparation of Scannatedda consists in mixing together durum wheat flour, water, yeast, salt, wild fennel flowers and extra virgin olive oil.
Once the dough is ready it is stretched out and cut to make strips that are braided to give an elongated shape.
It is then cooked in wood-fired ovens.
Scannatedda can be eaten as part of a lunch or dinner.
