Stracciatella Pugliese is a typical cheese of the Murge hills, in province of Foggia.

It is a cheese made with buffalo milk and made up of strips of mozzarella and fresh cream. It is a fresh cheese, white in colour, with a soft inside and a delicate sweet flavour.

 

Stracciatella is prepared by mixing in equal measure strips of mozzarella with fresh cream. It needs to be kept in fridge few hours before being eaten.

Stracciatella pugliese is used with pasta, risotto, vegetables or as a topping for bruschetta.

Pairing

It pairs well with Salice Salentino Rosato DOP or Martina Bianco DOP.
