Figs are one of the most important cultivation of Puglia, along with the production of olive oil, wine, citrus fruits and almonds.
Fig trees are spread throughout the whole region. There are different types of these trees: those with large or small fruits and those with black or white fruits.
For the preparation of the jam the ripe figs are cut into pieces and cooked with water until the mixture reaches its ideal consistency.
The compound is then transferred in hermetically closed glass jars and sterilized by immersing them in water and letting them boil for 20 minutes.
Figs jam is often used in desserts and cakes, for the production of sorbets and ice creams.
