Grape jam is a Traditional Agricultural Food Product (PAT) and one of the oldest products of Puglia, in particular of the province of Lecce.

Its preparation is made using typical local grapes such as Negroamaro, Malvasia Bianca and Malvasia Nera.

Mostarda di uva or grape jam is dark in colour and with an unmistakable taste.

 

For the preparation of the Mostarda di uva grapes from local varieties are first carefully chosen, washed and cleaned thoroughly.

They are then cooked with sugar, with a ratio of 200 grams of sugar per 1 kilo of grapes, until it reaches the ideal consistency.

The compound is then preserved in airtight glass jars.

Mostarda can be used as normal jam and, also, for the preparation of cakes and pies.
