Latte di mandorla (Almond milk) is a non-alcoholic drink made mixing almond juice and sugar together.
This drink was historically produced in monasteries as an alternative to milk during Lent when consumption of animal products was banned.
For its preparation you will need 2/3 of peeled and ground fresh almonds and 1/3 of sugar.
Add ground almonds to sugar and water and allow to rest for a while.
Filter the mixture with tea towels or sieve, pressing to let out the juice. Once done store it in bottled.
Almond milk is a great thirst quencher, pleasant during the summer when served cold and as granita.
