Vincotto is a sweet cooked wine prepared using red and white grapes varieties of Puglia.
It is the result of a slow reduction of grape juice to a syrup with a sweet taste.
It was already produced by the Romans who used it to enrich meat dishes or desserts. It is rich in antioxidants polyphenols that provide health benefits.
Prepare a mixture of white and red grapes, remove the beans and filter in a pot.
Cook over low heat for at least five hours until it becomes a thick mixture.
Vincotto is a drink for everyone. In Puglia it is often used for the preparation of typical products such as pettole, carteddate, mustazzoli and taralli neri.
It can be added to any product to give a sweet and aromatic flavour.
