Zampina di Sammichele di Bari is a sausage of beef wrapped on itself in a spiral shape. It is made with bovine, sheep and pig minced meat, seasoned with pecorino cheese, tomato, basil and salt.
It is a product with a very distinctive deep red colour and an exceptional taste thanks to the quality of the meat, the spices used and the local pecorino cheese.
The meat, mostly first-cut beef and second-cut sheep and pork is chopped and mixed with pecorino cheese, tomato, basil, salt and pepper.
The mixture that results is stuffed in lamb or goat guts.
The product should be stored in a refrigerator and eaten within a few days.
Zampina can be cooked on the grill and served with fennel, celery, olives and, of course, bread.
The last weekend of September, within the narrow streets of Sammichele di Bari, this special product is celebrated at the "Sagra della Zampina".
Good wines to pair to the Zampina are Salice Salentino Rosso DOP or with Castel del Monte Rosso DOP.
