Capers in vinegar preserve is a Traditional Agricultural Food Product (PAT) of Puglia, produced throughout the whole region.

Caper plants are widespread in Puglia where they grow spontaneously in all types of terrains. They are harvested by hand early in the morning or in the evening when the buds are still closed.


The preparation of capers in vinegar preserve consists, first, in selecting the capers and eliminating the stalk.

They are then left to macerate with salt for few days, making sure to mix them often, and stored in glass jars covered with vinegar.

Pickled capers are used to flavour various foods such as meat, fish and pasta.
