Caruselle n vinegar are a Traditional Agricultural Food Product (PAT) of Puglia, produced, mainly, in the province of Lecce.
Caruselle are wild fennel inflorescences harvested in spring and summer, during their flowering period.
Once harvested they are washed, dried, placed in glass containers and covered with slightly salted vinegar.
They can be consumed after about 20 days.
They are used as a garnish for vegetables, as a filling for sandwiches and as an ingredient for salads.
