Courgettes in olive oil are a Traditional Agricultural Food Product (PAT) of Puglia, prepared throughout the whole region.
Together with aubergines and artichokes are among the most common products in olive oil of Puglia.
The courgette preserve is prepared by washing and then cutting courgettes into pieces. These are then boiled in vinegar and allowed to dry.
Once ready they can be stored in airtight glass containers with garlic and parsley and covered with extra virgin olive oil.
Courgettes in olive oil are very good as a side dish, appetizer or as a filling for sandwiches.
