Sun dried peppers preserve is a Traditional Agricultural Food Product (PAT) of Puglia, prepared throughout the whole region.
This sun dried pepper preserve is made using long red, green and yellow peppers of local production.
For its preparation peppers are first washed, cut lengthwise and cleaned well by eliminating the seeds.
They are then sun dried for few days until they reach a humidity of 30-35%. At night they should be placed in a cool, dry place to prevent moisture.
Once dried they are wet in vinegar for a few seconds and allowed to dry. Once ready they are preserved in airtight glass containers.
The sun dried peppers are great as an appetizer or as a side dish to meat dishes.
