Sun dried red tomatoes in olive oil preserve is a Traditional Agricultural Food Product (PAT) of Puglia, prepared throughout the whole region.
The preparation of this preserve is made during the month of August using locally grown tomatoes called "San Marzano", a variety of elongated shape.
To prepare this preserve tomatoes must be cleaned, cut in half lengthwise and their seeds eliminated.
Later they are sun dried for one week with the inside facing the sun. During this week they are salted and stored in cool places during the night.
Once ready the tomatoes are placed in hermetically sealed glass containers, covered with extra virgin olive oil, adding, between layers, basil leaves and garlic.
Sun dried red tomatoes in oil are great to add flavour to many dishes, they can also be used as a filling for sandwiches or with salads.
