Sun dried tomatoes preserve is a Traditional Agricultural Food Product (PAT) of Puglia prepared throughout the whole region.
They are made in summer when tomatoes have an intense red colour and a slightly sour taste thanks to their direct exposure to the sun.
The fresh tomatoes are, first of all, washed, cut lengthwise and salted.
They are then dried in the sun until they reach a humidity of 30-35%. They should be stored in a dry place overnight.
Later they are soaked for few seconds in vinegar, dried, and finally stored in airtight glass containers.
Sun dried tomatoes are great for seasoning bruschetta and friselle. They can also be added to any recipe that requires the use of the tomato.
