Gioia del Colle DOP (Protected Designation of Origin) is a wine produced in vast areas of the province of Bari. In addition to the territory of Gioia del Colle, other territories include those of Acquaviva delle Fonti, Casamassima, Cassano Murge, Castellana Grotte, Conversano, Putignano, Noci, Rutigliano, Grumo Appula, Sammichele di Bari Sannicandro di Bari and Turi.
Gioia del Colle Rosso and Rosato DOP wines are made with Primitivo grapes, with a percentage ranging from 50% to 60%, the remaining part can be made of other grape varieties such as Montepulciano, Sangiovese, Negroamaro and Malvasia. Some versions may have a percentage of 100% of Primitivo, others, particularly the sweet and syrupy versions, have a percentage of 85% of Aleatico grapes.
Gioia del Colle Bianco must contain Trebbiano grapes for a percentage ranging from 50% to 70%, the remaining part is made of white grapes suitable for cultivation in Puglia and for a percentage between 30% and 50% of the total.

The various versions of the DOP Gioia del Colle include Rosso, Bianco, Dolce, Liquoroso and Riserva.
Gioia del Colle Rosso is a pleasant and distinctive wine with a harmonic and dry flavour.
Gioia del Colle Primitivo has a balanced and pleasant taste, tending to velvety with ageing.
Gioia del Colle Rosato is a wine with a dry, fresh and pleasant flavour, and a fruity and delicate bouquet.
Gioia del Colle Bianco is a pleasant wine with a delicate, harmonious, dry and cool flavour.
Gioia del Colle Rosso and Primitivo should be served at a temperature of 18 degrees.
Gioia del Colle Rosato must be served at a temperature between 12 and 14 degrees.
Gioia del Colle Bianco is served at a temperature between 10 and 12 degrees.
Gioia del Colle Rosso pairs well with orecchiette with meat sauce, the typical brasciole and tripe.
Gioia del Colle Primitivo is perfect with "Risotto alla salsiccia" – sausage risotto.
Gioia del Colle Rosato pairs well with salami.
Gioia del Colle Bianco pairs well with raw vegetables.
