Rigatoni pasta with anchovies and breadcrumbs
This is a simple but special dish with a unique flavour. The anchovies cooked in olive oil will melt and mix with the bread crumbs creating a crisp and flavourful compound that will combines well with the rigatoni pasta.
- 350 g rigatoni pasta
- 200 g bread crumbs
- 7-8 pickled anchovies
- Extra virgin olive oil
- In a heavy based pan, heat olive oil and add first anchovies in pieces then bread crumbs and cook for few minutes.
- Cook pasta in salted water and drain al dente. Mix it with the mixture of anchovies and breadcrumbs.
- Saute' for few minutes and serve.
