Matino (Lecce)
Matino DOP (Protected Designation of Origin) wine is produced not only in Matino territory but also in neighbouring areas of the towns of Parabita, Alezio, Taviano, Melissano, Gallipoli, Tuglie and Casarano.
Matino DOP is produced only in Rosso and Rosato versions with Negroamaro grapes for a minimum of 70%, and, for a maximum of 30%, of other grape varieties such as Malvasia Nera and Sangiovese.
Main grape varieties used to make Matino DOP:
Matino Rosso has a dry and harmonious flavour.
Matino Rosato is fruity wine with scents of pomegranate, and a warm dry and balanced taste.
Matino Rosso should be served at a temperature of 18 degrees.
Matino Rosato is served at a temperature between 12 and 14 degrees.
Pairing
Matino Rosso pairs well with red pork and lamb, cured meats, pasta seasoned with strong sauces, roasts and aged hard cheeses.
Matino Rosato pairs well with white meats, soups, 'Alici in tortiera', fish soups and semi-hard cheeses.
